What Is Dried Ginger?
Dried Ginger (Gan Jiang, 干姜) is the mature, dried rhizome of Zingiber officinale — distinct from fresh ginger (Sheng Jiang) in both its therapeutic intensity and specific actions. While fresh ginger disperses cold from the exterior, Dried Ginger is far more powerful, acting deep within the interior to warm the Spleen and Stomach, expel cold, and revive Yang.
Pungent and hot in nature, Dried Ginger enters the Heart, Lung, Spleen, and Stomach channels with forceful warming power. It is one of the principal interior-warming herbs in TCM, used to address cold deep in the middle burner (Spleen and Stomach) and even to rescue devastated Yang in emergency patterns. In clinical practice, it forms the core of classical cold-warming formulas including Li Zhong Tang (Regulate the Middle Decoction) and Fu Zi Li Zhong Tang.
