What Is Burdock?

Burdock (牛蒡), known as Niu Bang, is the long, slender root of Arctium lappa — a nourishing root vegetable (gobo) widely used in East Asian soups. Sweet and slightly bitter with a cool nature, it clears heat, helps the body detoxify, and supports healthy digestion.

Burdock root is especially rich in inulin, a prebiotic fibre that nourishes gut bacteria, along with antioxidants that support clear, healthy skin. In Chinese medicine its seed (牛蒡子, Niu Bang Zi) is a classic herb for dispersing wind-heat and soothing the throat, while the root is prized as a cooling, cleansing, everyday tonic food.

History & Origin

Burdock has been used as both food and medicine across East Asia for well over a thousand years.

Tang Dynasty (618 to 907 CE)
Burdock seed (牛蒡子) is recorded in Chinese materia medica for dispersing wind-heat and clearing toxins.
Song to Ming (960 to 1644 CE)
Both seed and root are detailed in herbals; the root gains favour as a cooling, detoxifying food.
Traditional East Asia
The root (gobo) becomes a staple vegetable in Chinese, Japanese, and Korean cooking, valued for cleansing and digestion.
Edo Japan
Cultivated widely as 'gobo', prized for its earthy flavour and health benefits.
Modern Era
Inulin, polyphenols, and antioxidants in the root are studied for gut, metabolic, and skin health.
